    Let's see if I can make this a regular deal. (With Smitty's endorsement, of course!  Course get it?  I'm a Brew Pub manager.  I love food and good beer:)

    Bubba's Hawaiian Chicken

    1. 5 lbs. boneless chicken thighs. (If you like white meat, tough shit!  Thighs are the most tender.)
    2. 10 garlic cloves, minced or smashed
    3. 4 TBS. minced fresh ginger.  (6 to 8 if you like it hot.  Ginger can actually be pretty spicey!)
    4. 4 TBS granulated white sugar. 
    5. 1 cup Low Sodium Soy Sauce
    6. 2 TBS. fresh cracked Black Pepper
    7. 1/4 Cup Rice wine vinegar
    8. 1/4 Cup TOASTED Sesame Oil (Gotta be toasted! The regular sesame oil doesn't have the right flavor!)
    9. 3 Medium White Onions (If you live near in an area with a farmers market, home grown are the best!)  Slice them from pole to pole in 1/8ths.
    10. 2 Bottles Free State Brewing Co. Copperhead Pale Ale (I know, you can't get it unless you're in Kansas or Missouri!  Any good Pale Ale will do.  I suggest Sierra Nevada.) 

    Combine garlic, ginger, sugar, soy sauce, pepper, vinegar, sesame oil, Pale Ale and onions.  Mix well.  In a large container, combine chicken thighs and marinade.  For best results, marinate over night. If you can't, THEY MUST MARINATE FOR AT LEAST 6 HOURS to capture the flavor.  Separate the onions from the chicken thighs.  Place the onions in non stick pan with 1 TBS butter on VERY low heat.  Caramelize the onions, very slowly. (The caramelized onions absolutely make this dish later on.  REALLY!)  Grill the chicken thighs!  Don't wait til the charcoal is "Perfect."  The thighs are actually kinda better when they are blackened and crispy on the edges.  It's okay to grill them when charcoal is really hot!  My family likes this dish with steamed jasmine rice.  My buddies like the chicken thighs on a bun with the caramelized onions!  Great Grid Iron food!  My first installment!
